49: Earthy Ube Puff Cookies

Earthy ube cookie

These are scone-like cookies with a white and blue exterior, and green interior. They go well with tea.


Ingredients:


2 cups flour

½ tsp salt

½ tsp baking soda (or none, if you want purple interiors, & smaller, less salty cookies)

¾ cup unsalted butter

1 cup powdered sugar

3 egg whites

2 tsp vanilla

4 tbsp ube flavoring powder

½ cup powdered sugar (for coating, after baking)




Note: This is the Ube powder I use:

Steps:


Set oven to 350 F


  • Cream butter in heavy mixer

  • Mix vanilla and sugar into butter. Mix until fluffy.


  • Mix flour, salt, baking soda, and ube powder in separate bowl.

  • Slowly pour mixed dry ingredients into wet ingredients bowl while wet ingredients are being mixed.

  • Remove bowl from mixer and breaks up butter clumps.


  • Whip egg whites until fluffy in separate bowl.


  • Fold whipped egg whites into dough.

  • Place tbsp sized cookie balls on parchment lined baking pan.

  • Bake at 350 for 13 min -15 min. Flip a cookie over to view the base. If it’s starting to brown, it’s done.


The cookies are puffier, and bluer, still with small areas of purple, after baking.
Here you can see the cookies have gotten bigger and bluer while they baked.


  • Remove cookies and roll them in powdered sugar. Use a spoon to not burn your hands. Let the cookies cool on parchment paper.
